Two ingredient banana pancakes: high in protein, low in fat and toddler friendly!
This is one of my favorite mom-hack recipes. In full disclosure, banana pancakes are not a replacement for traditional pancakes, they’re creamier and a bit denser but they make for a great alternative and have become a fan favorite in our household.
Since I’m a no fuss kind of cook, this two ingredient recipe is one of my go-to’s for breakfast. To jazz it up, we sprinkle in fruit and a few chocolate chips – crushed nuts are a delicious addition too.

Ingredients
1 Banana (ripe)
2 Eggs
Coconut Oil (or EVOO, butter for cooking)
Fruit, Chocolate Chips, Crushed Nuts (optional)

Instructions
Peel the banana and mash until consistency becomes smooth (pudding-like is ideal) and there are no large bumps remaining.
Whisk the eggs and combine with the banana mash. The batter will turn loose, unlike traditional pancake batter.
