Chocolate Chip Zucchini Bars

Wesleigh and I are loving baking together as a morning activity. I’ve enjoyed watching Wes develop some independence in the kitchen and she’s enjoyed the yummy snacks waiting for her when she wakes up from her nap. Most recently, we baked a modified version of my Grandmother’s zucchini bread – chocolate chip zucchini bars.

Thankfully, Wes enjoys her veggies, but I’ll take any way I can get some extra greens into her, even if they’re combined with chocolate.

Ingredients

3 cups grated zucchini (~1.5-2 zucchinis) (tools for the junior chef)

1 1/2 cups brown sugar

1/2 cup melted coconut oil (or butter)

1/4 cup milk (we use almond milk)

eggs

2 1/2 cups all-purpose flour

2 tsp baking powder

1 tsp salt

1 1/2 tsp ground cinnamon

1 cup regular chocolate chips

1/2 cup chopped walnuts (optional)

Instructions

Preheat oven to 325 degrees F.

Spray 12” pan with non-stick spray.

Combine brown sugar, coconut oil, almond milk and eggs. Stir until smooth.

Add in dry ingredients and stir.

Fold in grated zucchini  (I rinse out the excess water) and chocolate chips.

Spread batter into prepared pan and sprinkle on remaining chocolate chips.

Bake for 30 minutes.

Allow bars to cool. Cut bars and enjoy.
